Restaurant Bobe Copenhagen designed by the architectural duo Atelier Axo, comprising Caroline Sillesen and Rose Hermansen, is a lively and atmospheric restaurant situated in a heritage-protected former brewer's house from 1731 on the historic Gråbrødretorv square. In close collaboration with renowned chef and restaurateur Bo Bech, the design team spent months transforming the historic multi-room premises, balancing an understated modern expression with the preservation of centuries of architectural layers. The interior narrative draws inspiration from medieval Copenhagen, utilizing open fireplaces, exposed whitewashed wooden floors, and stacked firewood that serves as a highly textural and aromatic piece of sculpture. A central design motif throughout the bespoke elements is a gentle arch detail, directly inspired by the building's original vaulted ceilings in the kitchen area. A prominent and sustainable cornerstone of the dining room furniture is the reuse of classic J39 chairs designed by Børge Mogensen and produced by Fredericia Furniture, which were preserved from the iconic previous restaurant that occupied the space for sixty years. Complementing these design icons, the custom interior and carpentry solutions were executed by Malte Gormsen Møbelsnedkeri using natural, premium woods like oak and elm to evoke an interplay of warmth and muted, earthy tones. The main cocktail bar is beautifully crafted from elm wood and topped with a solid slab of Bianco Carrara marble, while the custom geometric dining tables feature oak compositions in varying round, square, and rectangular formats. Bespoke waiter stations and oak shelving match this material palette, alongside custom ash cabinetry and stone beer stations designed for the basement wine bar. Curated artwork enhances the cozy, unpretentious atmosphere, including an iron Madonna sculpture by Danish artist Alexander Tovborg and minimalist aluminum Krossing wall systems for glass display. Ambient upward illumination is provided by Pan Wall lamps from LYFA, which leave a distinctive pattern on the historic walls while directing an intimate downlight over the tables. Moving outside, the cobblestone courtyard expands the aesthetic into the fresh air, entirely furnished with chairs and café tables from Space Copenhagen’s steel Thorvald outdoor collection for &Tradition
